Red Velvet Cupcakes

Don’t they look familiar? Hahah…perhaps you’ve seen them at my wedding. I really like the look of these cupcakes and I’ve decided to give them a try.

Plus it’s my one year wedding anniversary! Time flies doesn’t it =p.

  • 350g cake flour
  • 1tsp baking powder
  • 1tsp salt
  • 2 tbsp cocoa powder
  • 2 oz red food colouring (I didn’t know how to measure 2 oz, so I just add enough of food colouring until I get the shade of red that I want)
  • 110g butter
  • 340g sugar
  • 2 eggs
  • 1tsp vanilla extract
  • 1 cut butter milk (can be substituted with milk plus a few drops of lemon juice)
  • 1 tsp white vinegar (I didn’t have white vinegar, so I substituted it with apple cider vinegar)
  • 1 tsp baking soda

for cream cheese frosting:

  • 453g cream cheese
  • 110g butter
  • 1tsp vanilla extract
  • 200g powdered sugar (**reduced amount)
  • pinch of salt
