Roast Chicken with lemon & thyme


  • 1 medium chicken (approx. 1.6kg)
  • 1/2 large lemon, thinly sliced and the slices halved
  • 1kg potatoes, peeled and cut into wedges
  • 1 courgette, sliced (aka. zucchini)
  • 3 large red onions, peeled and quartered through the root
  • fresh thyme, chopped (enough to season the whole chicken)
  • 2 cloves garlic, peeled and crushed
  • 1 tsp olive oil
  • salt and pepper


  1. Preheat the oven to 230°c
  2. Begin by removing the chicken from the fridge about an hour before cooking.
  3. Place the onions, potatoes, garlic, courgette and half the chopped thyme and the sprigs in a bowl, and toss them in the oil.
  4. Next mix the sliced lemon with the remaining thyme and place it inside the cavity of the chicken and position it in the centre of the tin.
  5. Add more seasoning, then place the roasting tin on the centre of the oven.Roast for 65minutes. (For a smaller chicken to serve 3-4, reduce the cooking time by about 10 minutes)

This recipe is adapted from Delia Smith’s “Delia’s Roast Chicken with lemon and thyme”. It is one of the many Waitrose Recipe Collection that i pick up from the supermarket shelves.
I can say the final product turned out to be quite close to the photo printed on this recipe card :)
